    Off to another rainy start this morning, but my Okie friends have really had their share of rain!

    Either the editor over here has changed, or it is just because this is the first entry that I am actually doing on my new computer?
    I like it though!  I like this font that I am using...of course, some of you may not see it this way if you don't have it on your computer.
    It is called Seqoe Script.

    It doesn't take too long anymore to get caught up here on Xanga. There are very few people who post on a regular basis anymore.
    I am one of the slackers!

    We actually got to go out for a few hours on Saturday & finally do some fishing!  We had a great time. Tried yet another new lake. Caught several fish. Heard & saw a loon. I love the sounds of those! It was just great being out on the water again. We have not had many of those opportunities this summer.

    Daughter has had a weird schedule this week & is having to work the weekend, so she had yesterday & today off.  It is fun having her around. We have so much fun together, no matter what we do! Yesterday we just had a lazy fun day. I have now seen all 3 of the High School Musical movies! lol..I really enjoyed them!  Then last night we watched the Hannah Montana movie! haha...it was cute. We have to do all of these things when hubby is gone, so we are taking advantage of his couple of days away!

    The rain has stopped temporarily & I am watching the birds go crazy outside eating on the berries! There are tons of them  (both birds & berries!)
    The apples are all getting really red on the trees. I have never had apple trees before. I don't know if I am suppose to wait for them to fall from the tree or am I suppose to try to get them out myself? lol...of course, I can't reach most of them, so I guess they will fall when they are ready.

    I have another recipe I must share with you... well, 2 really....

    This first one came out of that 5 ingredients or less magazine that I am just loving! Everyone went crazy over these & they are so "summery" tasting! lol.

    Strawberry Cookies
    (can also substitute lemon cake mix in place of the strawberry)
    makes about 5 dozen

    1 package strawberry cake mix
    1 egg, lightly beaten
    1 8 oz. carton frozen whipped topping, thawed
    2 cups confectioners' sugar

    In a mixing bowl, combine the cake mix, egg and whipped topping until well combined.
    Place confectioners' sugar in a shallow dish.
    Drop dough by tablespoonful into sugar; turn to coat.
    Place 2 inches apart on greased baking sheets.
    Bake at 350 degrees for 10-12 minutes or until lightly browned around the edges.
    Remove to wire racks to cool.

    mmm...they are so fruity & light & fluffy. VERY good and SO easy!

    OK...this next really isn't a "recipe" but I will make it into one as much as I can.
    It is very versatile, just use the flavors that you are in the mood for or that you like.

    Stuffed Chicken Breasts

    1 boneless, skinless Chicken breast per person.
    Cut almost in half, but not quite...create a "pocket"
    Make a "stuffing" to fill the pocket...here is where you can get creative...
    I was in the mood for "Italian"...so I used basil pesto, some extra fresh basil leaves garlic, sun dried tomatoes, parmesan cheese...(cu.t all up very fine or put in a blender or processor) you are only making enough to "stuff" the breasts, so just measure accordingly.
    Add some olive oil if necessary to moisten. Add fresh ground pepper & salt if you wish.
    Place the "stuffing" inside the pocket, being careful not to overfill.
    I then put in a  slice of mozzarella cheese.
    Close up the slit by folding flap over or use a toothpick to hold together if needed.
    Place in a casserole dish.  I then sprinkled an Italian herb/garlic spice blend on the chicken & drizzled with olive oil.
    Bake covered in 350 degree oven for 45 minutes, uncovering for the last 15 minutes.

    It was absolutely delicious.
    You can try stuffing with honey mustard, bacon, ham, cheddar cheese...you get the picture...just don't overdo it on the stuffing or the flavors.

    I have so many pictures to share with y'all. I think that I am going to make an album on here though for you to see them that way instead of overloading into posts.  They are uploaded on my computer but not here to Xanga yet, so I will submit this & then work on getting an album set up.

    Before I say goodbye I do want to share something that I got from a friend in an email. I just loved it!

    Recently, in a large city, a poster featuring a young, thin and tan woman appeared in the window of a gym. It said:
     
    THIS SUMMER DO YOU WANT TO BE A MERMAID OR A WHALE?
     
    A middle aged woman, whose physical characteristics did not match those of the woman on the poster, responded publicly to the question posed by the gym.
     
    To Whom It May Concern:
     
    Whales are always surrounded by friends (dolphins, sea lions, curious humans). They have an active sex life, they get pregnant and have adorable baby whales. They have a wonderful time with dolphins stuffing themselves with shrimp. They play and swim in the seas, seeing wonderful places like Patagonia, the Barren Sea and the coral reefs of Polynesia . Whales are wonderful singers and have even recorded CDs. They are incredible creatures and virtually have no predators other than humans. They are loved, protected and admired by almost everyone in the world.
     
    Mermaids don't exist. If they did exist, they would be lining up outside the offices of Argentinean psychoanalysts due to identity crisis. Fish or human? They don't have a sex life because they kill men who get close to them not to mention how could they have sex? Therefore they do not have kids either. Not to mention who wants to get close to a girl who smells like a fish store? The choice is perfectly clear to me; I want to be a whale.
     
    P.S. We are in an age when media puts into our heads the idea that only skinny people are beautiful, but I prefer to enjoy an ice cream with my kids, a good dinner with a man who makes me shiver and a drink with my friends. With time we gain weight because we accumulate so much information and wisdom in our heads that when there is no more room it distributes out to the rest of our bodies. So we aren't heavy, we are enormously cultured, educated and happy. Beginning today, when I look at my butt in the mirror I will think, "Good gosh, look how smart I am."

  • We've had little bits of rain off and on, but I sure would like a big booming thunderstorm! Haven't had a good one here all summer. The chicken sounds yummy. Another must try of your recipes!

    Daughter is coming over tonight, we're going out for dinner and then watch the movie....D is out of town again. So it's a girl's night tonight! yay!

  • I have made the cake mix cookies.  They are good with any flavor cake mix.

    We are enjoying a rather summery day today....a little muggy but some sun shine maybe showers later..

  • You come up with so many yummy recipes! I think I will try those cookies for K this weekend. I am trying to fatten him up - the trick will be to confine it to just him, lol! The chicken sounds fantastic, too!

    I'm not sure about the apples. Our neighbors used to have an apple tree (it was later cut down after they moved). They told us we could have all the apples. When my mom was able, she would make pies out of every available apple. We always waited until they fell, but you have to pick them up frequently and as soon as they fall, or they will spoil or animals will ruin them. I think you can pick them, too, but I'm not sure how to tell "when".

    Does your new computer have Vista? Mine does, and I was not able to post using Internet Explorer - I had to download Firefox, and it works on that. Go figure!

  • Isn't it wonderful and such a blessing really when our daughters turn out to one of our best friends :) Oh I must try those recipes I am always looking for new cookie recipes as my youngest son loves cookies. I think I will try out that chicken one next week, he is not much of a red meat eater so I am at a loss at times what new ways I can do chicken. :) xoxox Tynee
