    I am still going to try hard though to be over here more often.

    First I want to show you some beautiful feathered visitors that I had in my yard recently.
    It was a very active day at all of the feeders & I had fun just shooting pictures right from my dining room window!

    New Years day, daughter had to work.
    Hubby & I went into town. He took me to a jewelry store, I thought to replace the diamond that I had lost on my wedding ring. He instead bought me a new ring!

    He said he has plans for my old ring that the diamond is missing out of.
    He has already talked to a jewelry designer & is going to have it melted down & made into a pendant of 3 circles joined to represent the day we married & our 3 lives were joined. awwwww....that is so sweet!

    After we left the jewelry store, we headed on over to the theater & saw Avatar. For those of you who have not seen it yet, I highly recommend it. Yes, it is a 3 hour movie, but you never feel like it is long. The graphics are just amazing. We both really enjoyed it.

    Hubby then said to complete our day together that he wanted to take me out to dinner at our favorite restaurant! Wow, we had just an amazing day, just the 2 of us. And ended it with a wonderful meal & some yummy drinks & a fun time.

    What a guy!

    I have been staying busy trying to get my house all back in order . Getting all of the Christmas decor packed up & put away and putting all of my regular stuff back & getting it all cleaned up.  
    I also started working on a jigsaw puzzle.
    I still haven't started a new cross stitch project yet, but do have a cat afghan that I started a while back that Iam going to be pulling out soon & working to get that finished up.
    We have of course been spending a lot of time watching the bowl games. Also shooting pool & throwing darts.  Fitting some  Wii time in there as well!
    Life is good :)

  • Christmas

    I swear, my one & only New Year's resolution is to keep my site more updated & stay caught up with all of you!

    I know that I sound like a broken record, but WHERE is the time going to?
    Only 2 days left in this year...in this decade! yikes!
    I am about to embark on my 6th decade . Hubby pointed out that if I had been born 1 year earlier, it would be 7 decades.

    We had a nice Christmas.  We opened our gifts on Christmas eve. Saved our stockings (which are almost better than the gifts) for Christmas morning.

    I finally got a Wii! I have wanted Santa to bring the family one for the last couple of years, but hubby & daughter both said it was dumb or that they don't have time to play video games. Yeah well....it is hard for me to get them off of it!lol..  I also got the Bass Pro fishing game for it, so now I can fish year round, with or without hubby! lol....
    Other "big" gifts, was I got hubby a laptop. Plus he had already gotten his rifle early for hunting. Daughter got a GPS, (among many other things).

    The really big gift & best one of all was that I finally finished that Peacock cross stitch tapestry that I have been working on for over 10 years now! I didn't tell hubby & had brought it to a local frame shop, who was actually able to get it all finished up for me by Christmas eve day!

    I tried a new recipe for our Christmas dinner. Made a  roast beef tenderloin with a cranberry red wine sauce. mmmm good. I will post the recipe at the end of this post.

    I started  taking down my decorations yesterday. My house was just a mess & I was ready to get it back in order. Plus, I have had my tree up & the house decorated since the day after Thanksgiving. I spent the entire day yesterday working. Already have done more this morning. I have all of the Christmas stuff put away now. Now I need to put my regular stuff back out  & then thoroughly clean.
    I also have a follow up mammogram this afternoon. They had found a few abnormalities on my right breast  from my annual mammo & just wanted me to do a 6 month check up. So thinking positive that all will be just fine on that.

    We will have a very quiet stay at home New Years eve. I am sure there will be some game playing including the wii.

    I am going to post that recipe & then get off of this computer & back to work.

    Roast beef tenderloin with cranberry-red wine sauce

    1 beef center-cut tenderloin roast (2 pounds)
    1 tablespoon olive oil
    salt & pepper to taste
    3 tablespoons butter, divided
    1/3 cup minced shallots
    1 garlic clove, minced
    1 cup dry red wine
    1 cup Ocean Spray 100% Cranberry juice
    3/4 cup beef broth
    1 teaspoon fresh chopped thyme

    Preheat oven to 425.  In a large skillet, brown beef in oil on all sides over medium-high heat.

    Transfer beef to a greased shallow roasting pan; season with salt & pepper. Set aside skillet with drippings.

    Bake roast at 425 for 20-25 minutes or until meat reaches desired doneness (145 for medium-rare,160 medium, 170 well done)

    Meanwhile, in the reserved skillet, melt 1 tablespoon butter over medium heat.  Add shallots' cook and stir for 1 minute. Add garlic; cook & stir for 20 seconds.
    Stir in wine; increase heat to high. Add the cranberry juice, broth and thyme; bringing to a boil.  Cook for 10-15 minutes or until slightly thickened, stirring occasionally. Reduce heat to medium; whisk in remaining butter. Strain sauce. Slice beef & serve with sauce.

    6 servings.

    We had a fun day. Cooked hotdogs & brats out for lunch, played, visited & had a Christmas beer tasting while the kids napped!

    Saturday night we drove through the Christmas light display at Irvine Park. It was nice, but nothing like the light display at Rhema in Broken Arrow that we are use to!

    Friday night we went to another party. This one was at hubby's boss' house, but was all of the real estate agents (him & his wife have several businesses!)  It was a lot of fun. Food, drink, laughter. Also played a game similar to dirty santa...I ended up coming away pretty good...got the Twilight woods scent from Bath & body in the spray & the bath gel & a pretty hot pink pouffe. Hubby got a package of bungee cords, so he was happy!   Met some fun new people & reconnected with some that I met from last year.

    Poor daughter has a weird schedule this week. They have her opening some days & closing on others, which I don't know why they would do that. She got home this morning at 2:00 am then had to be back up at 5:45 to go back in to open. grrrr...Of course, she is young & can handle this ok, but I just don't understand why the managers would schedule like this. either have them open or close...not both....I really do sympathize with all of you in retail.

    We are under another winter storm warning. The meteorologists are having a hard time predicting this one though. It is suppose to hit us tomorrow & Friday.  That's ok...I'm ready for it...bring it on!

    Here we are halfway through the month of December already!  Unbelievable!


    I do believe that yesterday was my final frantic day of getting things finished for the holidays though. I did a bit more baking & made up some goody bags & gathered a few gifts for hubby's office people and I think that I am now completely finished.  Now I can relax & enjoy the hoidays!

    Besides shopping, baking, wrapping, decorating, etc...here is what else has been going on up here in the northwoods thus far in December....
    Friday, the 4th we had a Christmas party to go to...I managed to get a picture taken of hubby & I before we headed out...

    Last Tuesday & Wednesday, we were under blizzard warnings...we ended up with about 13 1/2" of snow. Here's a few shots of that...

    Whew! that was quite the job! Then came the shock of the expense of postage...whoa! It was something like $140 total for all.

    Just a cozy shot...I did hang my wreath up higher this year over the fireplace as I wanted to keep my eagle hanging as well. I don't think it looks too bad.

    We have been enjoying the deer meat that hubby put in the freezer for us. So far I have made stew, chili & tacos from it. He needs to get out there and get us another one!

    I am so frustrated about something & have spent endless hours trying to figure it out. About a week ago, I upgraded to windows 7 from window vista on my computer. I thought all was just fine...but since then I can't get my backup to work. I have been so good & faithful since getting this new computer by backing it up on a weekly basis...but now something is screwed up with it. Has anyone else changed over & if so have you had any problems?

    Well, I best get...I need to get some grocery shopping in today, but first I need to plan some menus...

    I hope you all have a good week & stay warm!  yikes speaking of staying warm...the temp here actually dropped a couple of degrees just in the last 2 hours. It is now at -7 with a wind chill of  -20.  brrr..  It is suppose to get up to 5 degrees though...so I hope that still happens!

  • Catchin up...

    I swear, I don't know where the time is going to for me. I have been wanting to do a post over here for the last several days, & have barely even made it over here to check up on you guys.
    I even had 3 days of no husband...you would think that I could have found the time to blog then, but no....I started on Christmas decorating & shopped long & hard with daughter. Of course, I had to fit a football game or 2 in there as well along with watching some "girly" movies with daughter while we had hubby away.

    Now I have a mess in the house with Christmas stuff pulled out. Presents that need to be boxed up &  shipped out. Lists going on in several rooms. And a Christmas party coming up on Friday night. I am going to head out soon to get a haircut, which means that I will be in town & may as well pick up a few things there. Ugh...how did I do all of this and hold a full time job at one time?

    We had a nice quiet Thanksgiving. By the way, that Appleton Farms ham from Aldi was great!  Hubby hunted that morning, got home at 12:45 , we ate at 1:00. I had been in the kitchen since 9:00 that morning & in about 20 minutes, we were done & had tons of leftovers! That's the way it is though. Next year, I swear we will either just go out & eat or make a pizza!
    Hubby of course was totally wiped out from being up super early to hunt, so he immediately went to the recliner after we ate & stayed there until it was time to shower & head back out for his long weekend! *note to self....next year, maybe he should just stay out & hunt that day too....that way I have no reason to have to cook, or overeat.  Which speaking of overeating, I did just fine at the main meal. But I made a Pecan Pie Cookie Bar (new recipe) and hubby didn't take it with him to the lodge, which meant that it was here with me...it was absolutely delicious....by the time he got home Sunday night I had eaten almost half the pan! oh yeah...they were excellent with my coffee for breakfast....great as a snack...just plain delicious! yeah I am very, very bad!  lol...

    here is the recipe:

    Pecan Pie Cookie Bars

    2 cups flour
    1 cup dark brown sugar, divided
    1 cup butter or margarine, melted
    1 large egg, beaten
    1 (14 oz) can Eagle brand sweetened condensed milk
    1 teaspoon vanilla extract
    1 cup chopped pecans

    Heat oven to 350.   Spray bottom of 13x9 baking pan with non-stick cooking spray.
    In a large bowl, combine flour, 1/2 cup brown sugar and butter.
    Spread on bottom of prepared pan. Bake for 20 minutes.
    In medium bowl, beat together egg, sweetened condensed milk, vanilla and remaining brown sugar. Stir in pecans.  Pour on top of baked cookie layer.
    Bake 25 minutes. Cool. Cut into bars.
    Store leftovers covered at room temperature.

    Another new recipe that I tried this year was an Apple Butternut Squash Casserole. I figured that it would go good with the ham. It did. I loved it & daughter liked it. Hubby ate a little bit but just because it had "squash" in it...he was a butthead about it! lol....
    the only thing that I suggest is to sprinkle brown sugar on top as it wasn't as sweet as I thought it would be. I don't know if it had anything to do with the apple filling that I used or not, but I did like it better after putting some brown sugar on it.

    Apple Butternut Squash Casserole

    2 lbs. fresh butternut squash, peeled and cubed
    20 oz. can apple pie filling
    1/2 teaspoon pumpkin spice seasoning
    1/2 teaspoon nutmeg
    3/4 teaspoon salt
    1 tablespoon butter or margarine

    Peel squash & cut into 2" cubes and place in a greased casserole.
    Top with apple pie filling. Sprinkle with seasonings and dot with butter.
    Cover with foil and bake at 350 for 50-60 minutes.

    serves 6

    Believe it or not, I did not take any pictures of my pretty table setting, or the food or my little family. Yeah, what's up with that?
    I did snap this one of hubby relaxing with one of our fur babies later on though....

    I guess she had missed him & knew that he would be heading out again.

    Daughter had to be to work at 3:30 on Friday. The store didn't actually open until 5:00, but she was to "work" the line getting out credit card apps & then getting them approved.
    She was lucky that it wasn't as cold or wet out as it was last year. It was still cold though at 24 degrees, but at least it was dry.  Plus she got to spend some of that time inside while she was running the applications. She got off at 2:00, came home & ate & laid on her bed & was asleep by 5:00 that evening. She didn't get back out of that bed until around 10:30 the next morning! 17 hours of sleep! lol...  We decorated the tree that I had put up on Friday. Played our Christmas music & then wrapped some presents.

  • Giving thanks...

     

     

    Hello friends & family,

    I just wanted to pop over here today as I will be busy tomorrow & then of course, the next day is Thanksgiving!

    Hubby had a fun time with the guys this past weekend & he came home with a deer...he didn't get the big buck that he was hoping for, but he did get a decent sized doe.
    He still has tags left for 2 bucks & 3 anterless (I think).
    He is headed out again Thursday, so maybe he will get another one.
    It has been a slow season around here so far  for everyone  compared to last year.

    Daughter & I had a fun weekend. We stayed out & about for most of it! We LOVED New Moon. She actually went back to see it again last night with some friends!
    I am almost done with my Christmas shopping too, thank goodness. The stores were already horrid this past weekend.

    I took Kathi's (stillgroovy) advice & went to Aldi & bought an Appleton Farms ham. You definitely couldn't beat the price, so I am anxious to see how it tastes.



    It will just be the 3 of us, unless we have any "drop ins". I always make too much food, but leftovers are just fine with me. I am trying a couple of new recipes this year. If any are worth sharing, I will put them on here.

  • Hello all and happy Friday!


    Rifle season opens tomorrow here in our area & hubby is like a little boy on Christmas morning! He is going to deer camp for the weekend!!  He will leave tonight so he can get up bright & early tomorrow morning in hopes to get that big buck.  

    Daughter & I are looking forward to a fun weekend ourselves. We have movies, shopping & wrapping presents on our agenda! 
    We are going to go & see New Moon. I am SO excited!

     

    I can't believe that next week is Thanksgiving already.  Daughter has requested ham this year, so ham it will be!  I am sure that we will be eating fairly early as I have a sneaky feeling that hubby is going to want to head out that evening to get some more hunting in. That's ok though. It will just be the 3 of us & will be a fairly laid back day.  Daughter will have to get to bed early that night or pull an all nighter...she works in retail & yes....she has to work the morning shift on Black Friday. She has to be to work at 3:00 am....OMG...I can't even imagine.... 

    I was disappointed that the live feed of my brother's band playing their Friday the 13th gig didn't work last week. The video part did, but the sound was nothing but static, so we didn't get to hear them. From what I heard though, they were a huge hit with the crowd & also got another gig to play at the Mardi Gras festival in February. So way to go Snakebone!!!  Here is a picture that I stole off of the bands FB site!

    We had fun last Saturday. We went over to some friends house for a tailgate party. They are huge Iowa fans (he use to play for them). It was a fun time & we got to meet some new people, which is always nice too.

    I have a few things to share with you & then I am out of here....

    This first one I originally got from my mom in an email...I have since gotten it from a couple of other people, so it is making its rounds & you  may have already seen it...but if not, you may want to try this for your Thanksgiving turkey....

    Subject: A must have Thanksgiving turkey recipe

     

    Ingredients:
    1 whole turkey
    1 large lemon, cut into halves
    salt and pepper to taste
    butter or olive oil, whichever you prefer

    Heat oven to 350 degrees

    Rub butter or oil over the skin of the turkey until it is completely coated. 

    Sprinkle with salt and pepper and any other seasonings you prefer.

    Take a knife and gently separate the skin from the breast meat .

     Slide  lemon  halves  under  the  skin  with  the  peel  side  up, one on

    each side.  This way the  juice from the lemon will release into the breasts.


    Cover and bake for 30-45 minutes.   Remove cover and continue

    to roast until juices run clear, basting every 15-20 minutes.


    If you've followed these steps correctly, your turkey should

    For those of you who aren't aware of them, the ACLU, (the American Civil Liberties Union) is the one suing the U.S. Government to take God, Christmas or anything Christian away from us.

  • Me Bad!

    I hang my head in shame with how long it has been since I last blogged.

    There is just not a whole lot going on around here at all.
    I haven't been cooking any new recipes or at least any that are worth sharing...there's been no wildlife tromping around for me to get pictures of....weekends come & go now that it is hunting season, so I am not even doing anything fun then to share with you!  Even the weather has been normal or I guess I should say, unseasonably nice for here...so no snow pictures to share!
    Basically it is just a wonderful quiet life that I am living right now, but that tends to be boring to others! lol...

    I did just see that another one of you just recently posted a picture of your kid from Halloween, so I guess I won't feel funny doing that here now. Of course, your child is grown & working on a cruise ship...unlike mine who is grown & living right here. And you did have to snag yours from his facebook, and I have had mine here on my computer since I took it back on 10/31.. OK...so once again, I hang my head in shame!

    I spend too much time in the mornings during the day on Facebook....mostly just catching up with everyone from the day before. Then spending too long tending to not 1 but 3 different farms...yeah, if you're not on FB & don't know about the farm games...don't ask...I really can't believe that I even got started on them. And now that I have them, I have to take care of them!  Then there is my "fluff friend" ....yet another thing that I must feed & pet & take care of.  Then of course, it takes quite a while to accept all of the cyber hearts, hugs & smiles not to mention the buttons for my flair boards , yes, boards..plural...as in more than 1. And of course, every time I accept a new flair button, I have to send one, which means looking at so many & getting carried away because I love stuff like that.  I also have a virtual garden & aquarium...but I am helping with global warming on those....hmmm....what else...oh yes, the games...the MANY games....have I told you lately that I love to play games. I always have. I am also very competitive. If someone gets a higher score than me, I have to keep trying to beat it.

    I am also the type that once my family is home in the evening, I like to cater to them....even if we are just sitting together watching tv, I don't spend much time on the computer once hubby is home from work.

    I am just having a hard time cramming all of my computer time, daily chores & errands, cooking, crafting, family time & now getting ready for the upcoming holidays all into the time of one day.  LIfe is just so danged tough!  lol...Oh but how I love mine....

    We just bought hubby an early Christmas present...he HAD to have it now though because rifle season opens this weekend...yes, he got a new rifle and a scope & a case & the shells... who knew there was so much involved! Oh well, he works hard for his money, he deserves to have his toys.
    It has been bow season here, and he has been hunting here on our property (which isn't much) so far he hasn't had any luck. He will be trying some other places starting this weekend so maybe between that & his new rifle, he will be able to stock our freezer.

    There is definitely no fish in the freezer....we didn't get much fishing time in this year as there wasn't much of a summer.  I really hope that we get to make up for that next year.


     We just watched this the other night....OMG...it was hilarious..loved it.  There was one particular part that had me just rolling on the floor. I bet if you watch it, you will know which scene that I am talking about!

    I hope all of you ghouls & goblins out there have fun trick-or-treating or handing out candy or whatever it is that you are doing to celebrate.
    We don't get anyone out here in our neck of the woods. Kind of nice to not to have to buy the candy, although you know that I DID buy some...it is Halloween after all! Of course, most of the candy is long gone!  I do miss seeing the little ones in their costumes, but then again, I don't miss having to get up & down all night to answer the door & to mess with the rowdy kids. So I guess it has its pros & its cons, just like everything else in life!

    Not a lot has been going on here. Which is why I haven't blogged lately. I have had just absolutely nothing...nada...zip.
    I have been getting over to your sites, for those of you who have things to write about.
    We are all doing well, just nothing going on that is very exciting.

    Daughter is getting ready now to go out. If I can, I will get some pictures of her.
